This Bob’s Steak & Chop House restaurant is located within the Omni Louisville Hotel. Paying homage to some of Louisville’s greatest treasures, the restaurant decor celebrates the rich history and tradition of American thoroughbred racing, Muhammad Ali, and the Kentucky bourbon industry.

Jason Emge

General Manager

Jason started his service career the way many people do, as a side job in high school. 

He started as a busser and quickly worked his way up to be a server and bartender at a local restaurant in the Highlands. It was here, he fell in love with wine and began his wine education working under a Master Sommelier. He continued to develop, managing the restaurant he started his career in, before becoming the Beverage Director and ultimately General Manager of a high-end steak and seafood restaurant with multiple locations. 

Jason later accepted a position with a larger corporate steak house, again as the Beverage Director, then moved into an Assistant GM role over the next 7 years.  He is now excited to be able to call Bob's Steak & Chop House, in the beautiful Omni Hotel in Louisville, home!

Local chef James Moran has called Louisville home for 35 years. James’ love of umami flavor comes directly from his mother. She passed along her wisdom and Korean heritage, both cooking and culture, to him from birth. Her legacy infuses James’ work at its deepest roots.
